P M S Pancakes

- 2 cups flour, I use a healthy flour now, but any flour will work shopping list
- 1/4 cup cocoa, or cacao - it's healthier for you shopping list
- 1/2 cup sugar, or the equivalent in an other sweetener shopping list
- (with the use of applesauce, sweetener is not really needed, shopping list
- 1/4 cup honey would be great in this - just don't use raw honey shopping list

- 1 tablespoon baking powder shopping list
- 1/2 teaspoon sea salt, any type of sea salt shopping list
- 2 cups milk shopping list
- 1/2 cup apple sauce or 1/4 cup of sweet creamy butter - softened, or 1/4 cup olive oil shopping list
- 1 teaspoon vanilla, I use my homemade Vanilla now shopping list
- chocolate chips, I prefer chocolate chunks! shopping list
- Dark and White chocolate! shopping list
- Other flavored chips like, Carmel, butterscotch, Vanilla, Peanut Butter, Cherry, lots of choices.... shopping list

- You could add fruit to this also, I would say about 1/2 cup would be good: shopping list

How to make it
- Mix all dry ingredients.
- Make a well and add liquids.
- Mix well.
- Add more or less liquids to your desired consistency.
- Pour enough batter for a pancake on a preheated skillet.
- [Now I use a large electric griddle, so it takes less time.]
- I use about 1/4 to 1/3 of a cup of batter and I have the most perfect pancake pan so they come out very nice,
- Sprinkle with chocolate, or other flavored, chips.
- Flip when edge is dry-ish and bubbles have started to form over the up-side of the pancake.
- Cook until done, careful the melted chocolate chips stick to your spatula.Maybe, spray the spatula with oil before flipping, I will have to try this...
- We serve these with chocolate whipped topping that you get in the can and hot fudge topping or chocolate syrup.
- Maraschino Cherries are great on these also!

- These are a heavier pancake due to the use of the apple sauce.
- Use butter or olive oil to make them lighter and fluffier.
