Ditalini Pasta Salad

- 1 cup mayonnaise shopping list

- 8 ounces Ditalini pasta uncooked shopping list
- Pot of salted water for boiling pasta shopping list
- 6 ounces small frozen shrimp peeled and de-veined, 60-80 count per pound (about 1½ cups) shopping list
- 6 ounces frozen peas about 1 cup shopping list
- 1 cup diced celery 2-3 stalks shopping list
- ½ cup diced red bell pepper about ½ pepper shopping list
- ½ cup diced yellow bell pepper about ½ pepper shopping list
- 1 medium carrot, shredded about ¼ cup shopping list
- 2-3 plum tomatoes, diced about 1 cup shopping list
- ¼ red onion, diced about ¼ cup shopping list
- 1 large cucumber, diced about 1 cup shopping list
- 2-3 green onions, green part only optional for garnish shopping list
How to make it
- 1. Bring a pot of salted water to a boil and add in the pasta. Boil for 8 minutes and add the frozen shrimp. Stir and cook an additional 2 minutes or until the pasta is al dente.

- 2. While the pasta is cooking, combine the dressing ingredients in a bowl and whisk to combine.

- 3. Drain the pasta and shrimp and transfer to a large mixing bowl. Add the frozen peas to the hot pasta and shrimp and stir to combine. Add about ¼ cup of the dressing and stir to combine. Place uncovered in refrigerator for about 30 minutes, then cover with plastic wrap and chill for 2-4 hours. Cover the dressing with plastic wrap and refrigerate.

- 4. While the pasta mixture is chilling, prep the vegetables by dicing them into about ½" dice. Shred the carrot.

- 5. Add the vegetables and the remaining dressing when the pasta has chilled completely. Stir to combine. Garnish with chopped green onions.
