Ingredients
  • Fresh tomatoes, Summer only, Plum is best
  • EVOO
  • S&P

Directions
  1. Core out the stem, slice in half
  2. Drizzle some EVOO on top
  3. Sprinkle w/ S&P
  4. Roast in oven @425, for 1 hr.
  5. Transfer to a collander, drain, cool
  6. Package for freezing
  7. Peel off skins when you defrost them, but while still firm. they slide
  8. right off.
  9. Use in sauces, stews, soups.
