Fragrant Thai Meatballs With Peanut Sauce Recipe
You can save time by using a prepared peanut sauce, but this one is really easy to make, and tastes fresher.

  • MEATBALLS:
  • 1 lb (450 g) minced beef or pork (or comination)
  • 1 TBSP (15 ml) chopped garlic
  • 1 lemon grass stock, finely chopped
  • 4 spring onions, finely chopped
  • 1 TBSP (15 ml) chopped fresh coriander
  • 2 TBSPS (30 ml) red curry paste
  • 1 TBSP (15 ml) lemon juice
  • 1 TBSP (15 ml) fish sauce
  • 1 egg
  • salt and freshly ground black pepper
  • rice flour, for dusting
  • oil, for deep-frying (in a wok; shallow-fry also works)
  • sprigs of coriander for garnish
  • PEANUT SAUCE:
  • 1 TBSP (15 ml) vegetable oil
  • 1 TBSP (15 ml) red curry paste
  • 2 TBSPS (30 ml) crunchy peanut butter
  • 1 TBSP (15 ml) palm sugar (common Asian ingredient, similar taste to a combination of brown sugar and molasses)
  • 1 TBSP (15 ml) lemon juice
  • 1 cup (8 oz / 250 ml) coconut milk

Directions
  1. Make the peanut sauce: Heat the oil in a small saucepan, add the curry paste, and fry for 1 minute. Stir in the rest of the sauce ingredients and bring to a boil. Lower the heat, and simmer for 5 minutes, until the sauce has thickened. Set aside.
  2. Make the meatballs: Combine all the meatball ingredients (EXCEPT the rice flour, oil, and coriander garnish), adding salt and pepper to taste. Mix and blend everything together well.
  3. Roll and shape the mat into small balls about the size of a walnut. Dut the meatballs with rice flour.
  4. Heat the oil in a wok until hot and deep fry the meatballs in batches until nicely browned and cooked through. Drain on paper towels.
  5. Serve garnished with sprigs of coriander and accompanied by the peanut sauce on the side.
