Ingredients
  • 1 c. sugar
  • 1 c. water
  • 3 pounds of watermelon

Directions
  1. Place the sugar in a saucepan with the water and stir over low heat - never boiling - until the sugar has completely dissolved.
  2. Once dissolved, increase the heat and bring to a boil, then reduce the heat and simmer, without stirring, for 5 minutes.
  3. Pour into a large bowl to cool.
  4. Pace the watermelon in a food processor (without rind, obviously) and puree.
  5. Strain the watermelon to remove seeds and fibers.
  6. Mix the watermelon with the sugar syrup and pour into a shallow metal dish. (e.g. a pie plate) Freeze for 1 hour or until just frozen around the edges.
  7. Scrape the frozen edges back into the mixture with a fork.
  8. Repeat freezing, scraping the frozen edges every hour, until the mixture has even-sized ice crystals.
  9. Serve in small scoops in a glass..
