How to make it

  • Sift together the dry ingredients.
  • In a small saucepan melt butter and honey. Remove from heat and stir in peanut butter (if using). Set aside to cool to room temp.
  • Once cool, add eggs one at a time. Gradually blend in dry ingredients. Mix in mashed, ripe banana (if using).
  • Pour into an 8 x 8 baking pan which has been greased or lined with parchment.
  • Bake 20 - 25 minutes, until brownie pulls away from the sides of the pan and middle springs back when lightly touched.

    Carob is a chocolate substitute. If you ask me, it tastes nothing like chocolate, but I guess it'd do the trick if you had a severe allergy. I believe it is also vegetarian (or vegan, maybe?), whereas, somehow, regular chocolate is not.

    You can find carob powder at health food stores. I got mine at Whole Foods.

    I don't have carob powder ---what is it for? Can I buy at the grocer? Does it just add flavor or needed like baking powder?
