How to make it

  • To make the cake: Heat the oven to 225 C / 425 F / Gas mark 7
  • Melt the butter and let it cool slightly.
  • Beat the eggs and sugar until airy and white
  • Beat in the baking powder, vanilla and cocoa
  • Add the flour, milk and butter and stir to a smooth batter
  • Grease a pan, about 40*32 cm (15*12 inches)
  • Pour the batter in the pan, smooth the surface and bake at the bottom of the preheated oven for about 10-15 minutes
  • To make the icing: Melt the butter
  • Stir in the coffee, cocoa, vanilla and icing sugar to make a smooth cream
  • Spread over the cooled cake and sprinkle with grated coconut or colourful sprinkles if you like
  • Cut into squares, how big is up to you!

    Lucky me my neighbor is Swedish and he shares his baked goods which are to die for just like yours.
    Love the coconut to me it is not an optional ingredient.
