Ingredients
  • 2 cups all-purpose flour
  • 1 cup margarine (or butter, or mixture; cold)
  • 2 TBSPS brown sugar (light brown is best)
  • 16-oz container of Cool-Whip, thawed (reserve 1 cup for garnish)
  • 1 cup (8 oz pkg) cream cheese, at room temperature
  • 1 cup icing sugar
  • 2 pkgs Jello-O brand Instant Pistachio pudding mix (4-serving sizes)
  • 3 cups milk

Directions
  1. Preheat oven to 350 F.
  2. MAKE THE CRUMB BOTTOM: Mix flour and brown sugar toether, and cut in the margarine (or butter) with a pastry blender, pulsed briefly in a prcessor, or with two knives, just until mixed together and pea-like consistency. Don't over-work it, or it will be tough.
  3. Press into a rectangular baking pan, (glass works well, 13 X 9-inch, or 12 X 8-inch) and cook in preheated oven for 10 to 12 minutes, or until very slightly browned. Remove from oven and cool completely in the baking dish on a rack.
  4. MAKE THE FILLING: Beat the cream cheese a bit, or cream it with the back of a spoon. Beat in the icing sugar, and then fold in the Cream-Whip (minus 1 cup for garnish, remember). When well blended, pour over the top of the cooled crumbs.
  5. PREPARE THE TOPPING: Beat together the Pistachio pudding mix (or instant pudding of your choice) with the milk,as directed on the pudding box, BUT using 3 cups milk instead. Spread over the cream cheese.
  6. Top with remaining (reserved) Cool-Whip, and put back in freezer to set.
  7. **The original recipe tells you to freeze until firm, cut into servings, and place on serving plates to "rest" for about 5 minutes. We find it best when it's really, really cold, but not frozen when you serve it. You decide!
