Ingredients

1 firm, lightweight eggplant

1 whole lemon

3 TBSPS olive oil (good-quality, preferably a fruity one)

Salt substitute, to taste (Carl uses substitute; I use the real stuff)

Pepper, to taste

1 onion, finely chopped

Directions

Choose a firm but lightweight eggplant. Place directly on high gas burner; do not use saucer or pot. (I am not lucky enough to have a gas stove in my house, so I turn my gas BBQ grill up super-high and use it. Close enough!)

Turn regularly for 5 to 6 minutres until charred and tender. (**This will take longer on your gas BBQ; make sure it's well charred on the outside.)

With a long fork, remove eggplant from burner and place under cold tap water for easier peeling. Peel charred skin.

Put peeled eggplant on a large plate and slice it open. Squeeze the lemon's juice on eggplant to keep it from turning brown. Tilt plate and spoon off the bitter juices.

Mash coarsely with a wooden spoon. Add olive oil, salt (or it's substitute), and pepper to taste.

Store in glass jar in refrigerator until ready to serve.

Before serving, mix in onions.

Can be used as a dip, or as hors d'oeuvre on crackers or on cucumber slices.
