How to make it

  • Preheat the oven to 400 degrees
  • Grease a cookie sheet very well. I rub with a paper towel dipped in olive oil.
  • Beat the egg, pepper and milk together and pour it over the fish in a zipper style bag. Put in the frig while you fix the chips.
  • Open the bags of chips and crush the chips while still in the bag, you can use whatever heavy object you have but try not to have the bag explode all over the kitchen (it's a mess to clean up)
  • A rolling pin works if you have one, or a unopened can of beans will work in a pinch.
  • Dump the crushed chips on a plate.
  • Take the fish out piece by piece and coat heavily in the crushed chips.
  • Put them on the cookie sheet and bake about 8 minutes. Turn over very carefully and bake another 5 to 7 minutes until they are nice and toasty looking.
  • A squeeze of lemon is all you need, the strong flavored chips make a really good coating and you don't even need the tartar sauce but I suppose you could make it if you want to go to the trouble.
