Wild Berry Triangles Recipe

Ingredients

1 tsp vanilla essence

200 gm creamed cheese, softened

1 lemon, juice and zest

200 gm frozen mixed barriers, thawed and well drained (Fresh when Available)

1/2 cup sugar

1 tsp cinnamon powder

3 sheets of Mountain Bread cut into halves

2 cups vegetable oil

Directions

In a bowl combine vanilla, creamed cheese, lemon juice and zest and 1/2 of the sugar until smooth. Fold in the berries carefully.

Place a desert spoonful of the mixture onto the end of Mountain Bread, brush the edges with a little water and fold from point to point to make a triangle.

Mix the remaining sugar with the cinnamon.

Heat the oil until hot in a saucepan. Add the triangles and cook for 2 minutes or till golden brown. Remove and drain on paper towel to remove excess oil

Toss through the sugar and cinnamon mix.
