Watermelon Granita Recipe
Very light and very refreshing dessert for a hot summer's day. Enjoy.

Ingredients
  • 4 pounds watermelon peeled chunked and seeded
  • 3/4 cup granulated sugar
  • 1 cup water
  • 3 tablespoons lemon juice

Directions
  1. Place 5 cups watermelon chunks in blender and blend briefly to coarse puree.
  2. Measure sieved puree to make 3 cups.
  3. Combine sugar and water in a medium saucepan and bring to a boil.
  4. Lower heat and simmer 1 minute.
  5. Let cool completely and combine with watermelon puree and lemon juice.
  6. Pour mixture in metal pan and place in refrigerator.
  7. When completely chilled cover pan then move to freezer and freeze 30 minutes.
  8. Stir mixture with fork scraping down sides well to loosen ice crystals that have formed.
  9. Freeze another 30 minutes and repeat scraping and stirring.
  10. Repeat several times for a total of 3 hours.
  11. Serve within 6 to 8 hours.
