Old Fashioned Peach And Sour Cream Pie Recipe
Another old favourite of mine, that doesn't scream "too-sweet" on the tastebuds. You can use nectarines instead of peaches. I have no idea where I got this one from...

Ingredients
  • Pastry for a 9-inch (23 cm) single crust pie
  • 1/4 cup granulated sugar (50 ml)
  • 1/4 cup all-purpose flour (50 ml)
  • 1/4 tsp freshly grated nutmeg (1 ml)
  • Generous pinch of ground cinnamon
  • 1 1/2 cups sour cream (375 ml)
  • 1 samll lemon
  • 2 TBSPS brown sugar (25 ml)
  • 5 ripe peaches (or nectarines)

Directions
  1. Preheat the oven to 425 F (220 c). Roll out pastry and line a 9-inch pie plate (23 cm). Trim and flute the edges but do not prick the bottom.
  2. Use a fork to stir the sugar with the flour and spices into a medium-size bowl. Stir in the sour cream, the finely grated peel of the lemon, and 1 TBSP of lemon juice (15 ml).
  3. Thinly slice unpeeled nectarines. (If using peaches, blanch, peel, and slice).
  4. Mix 1 cup (250 ml) of the cream mixture into the ruit until coated; pour this into the pie shell. Bake on the bottom rack of preheated oven for 12 minutes or until pastry edges start to brown (Mine NEVER take quite that long; keep an eye on things).
  5. Turn the oven cown to 350 F (180 C).
  6. Spread the remaining cream mixture over the filling. Continue to bake for about 20 minutes. Sprinkle brown sugar over the surface. Continue baking and additional 30 to 35 minutes or until fruit is tender when pierced with a fork.
  7. Let sit on a rack about 10 minutes before slicing & serving.
