Ingredients
  • 18 ounces of semi-sweet or bittersweet chocolate chips (1 1/2 bags)
  • 3 cups chopped walnuts or pecans
  • (I have used "cocktail-style" peanuts and its good if you want a peanut flavor.)
  • 1 cup of regular butter (2 sticks) Do not use margarine!
  • 1 can (13 ounces) evaporated milk
  • 4 cups of mini marshmallows or 20 large marshmallows, cut up
  • 4 cups granulated sugar (no substitutes!)
  • 2 teas. vanilla extract
  • **All of your ingredients should be a room temperature!

Directions
  1. Put your marshmallows, chips, butter and vanilla in a large bowl.
  2. In a heavy pot, add the sugar and milk and bring to a boil over a medium flame.
  3. Bring this to a rolling boil and cook for exactly eight (8) minutes
  4. Pour the milk and sugar over the marshmallows, chips, butter and vanilla and let it all sit for a minute.
  5. Start stirring with a wooden spoon until the marshmallows have melted and add the nuts and stir until the fudge is smooth.
  6. Pour into a 9x13 pan or a 15x13 sheet pan. (I use a 9x13 disposable aluminium pan.)
  7. Cover your pan with aluminum foil. (You do not have to butter your pan before pouring your fudge into it. )
  8. Let fudge rest and cure overnight or for at least several hours until firm to the touch.
  9. *You can add more or less nuts as per your preference.
  10. *I have added items like M&M's during the holidays, pretzel pieces, used cashews (which was interesting!), toasted coconut, and even bits of vanilla wafers. The fudge without the nuts is excellent as well! You can even roll it into small balls and then roll it in chopped nuts for Fudge Truffles. You can add more mini-marshmallows AFTER you've mixed the fudge together for a Rocky Road Fudge.
  11. *This fudge is very soft before it sets as is MOST fudge. After you mix it that you can use a character cake pan and fill that with the fudge but if you do, spray the pan first with an anti-stick spray of some kind. (Bunny-shaped fudge for Easter, Santa-shaped or Xmas tree-shaped fudge)
  12. *You can pour this into several small aluminum loaf pans for gift baskets or in round decorated tins for the holidays.
  13. **See's Candy is now at $15.00 a pound!
  14. Serving suggestion: This fudge is best when served at room temperature.

Made this tonight. Looks good. Just waiting for it to "set" I only used 12 oz evap. milk. They dont make 13 oz anymore. So we shall see how it goes. Oh and I am such a dork. I was busy talking on the phone while making this and forgot to add vanilla to my bowl. Thing is I had it measured out too... DUUUh!

Annieamie, Never answered your question. hehe I loved this fudge! It is very creamy and tasty. It did stay soft though but not so soft you needed a spoon or anything. Thanks again! Also wanted to add this stores well in fridge and freezer if you have left unders: )


I recently made this fudge. Although it is pliable like the author indicates it does not taste like the fudge I was expecting from my childhood. It is more like a very chocately, sweet marshmallow flavour with nuts. Albeit different and good, I was preferring a true fudge recipe. I hope I'm not dinged for my comment, I am posting my truthful opinion. I should also point out my family and friends did eat the entire batch, though.


Thanks for your comment, Snarky. This is the fudge I grew up on as there was a See's Candy store in my neighborhood. I don't know what kind of fudge you grew up on but would enjoy seeing a recipe for your kind of fudge someday posted on Group Recipes. In fact, there's an "Absolute Fudge" group listed and perhaps you'd be willing to post your recipe there. Please share it with all of us?

Hey Annie? I made 3 batches of your fudge for Halloween. I tossed all three pans in the fridge to set and it all came out perfecto! I had to hide some in the freezer just for me, girl!!!! LOL dang kids eat too much anyways...................love this recipe!


Thanks, Cinnamon! I made a batch too and rolled it all into fifty balls. I rolled them in yellow and orange "jimmies"..those cake decorations! The kids loved them!

Alterations


I've been trying to copy See's Vanilla Fudge for years. I just made it the other day using Premium white chips and walnuts with the rest of the ingredients. It came out well. If any of you have any good Vanilla fudge recipes, could you please post them? Thanks! Happy Holidays, All!


For the holidays, try adding chopped red and green maraschino cherries to the white chocolate; so good.
