Strawberry Snowball Salad Mold Recipe

Ingredients

1 cup boiling water

1 package (3 ounces) strawberry-flavoured gelatin

1/2 cup sweet red wine OR cranberry juice cocktail

1/4 cup cold water

1 package (3 ounces) cream cheese, softened

1/3 cup finely chopped nuts (walnuts, almonds, pecans, anything)

2 cups fresh strawberries

1 TBSP granulated sugar

Directions

NOTE: You can use frozen strawberries, if need be; omit the cold water, use 1 (16 ounce) pkg frozen strawberry halves; add the frozen strawberries and wine to the dissolved gelatin. Stir until thickened; continue recipe as directed. (The strawberries will be mixed throughout instead of layered like the fresh strawberries.)

Pour boiling water on gelatin in a bowl; stir until gelatin is completely dissolved. Stir in wine (or cranberry juice) and cold water. Refrigerate until slightly thickened.

Shape cream cheese into 18 balls, and roll the cheese balls in the chopped nuts.

Mix the strawberries and sugar together in a separate bowl.

Pour 1/3 of the thickened gelatin into a 6-cup ring mold. Arrange the cheese balls evenly in the gelatin.

Spoon strawberries over cheese balls.

Carefully pour remaining semi-set gelatin over strawberries.

Refrigerate until completely firm. Unmold and slice to serve.
