This would go good with cheesy potatoes. Great for those who love apples.

Ingredients
  • 4 cups dry bread cubes
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 2 apples, cored, peeled and chopped very fine
  • 1 cup chicken broth
  • 1 tsp. allspice
  • 1 T. sugar
  • Four boneless, skinless chicken breasts, pounded flat
  • 1/3 cup apple juice

Directions
  1. Preheat oven to 350 degrees. Combine first seven ingredients in large bowl and mix well
  2. lace about two tablespoons of stuffing on top of
  3. each chicken breast and roll up so that the stuffing is completely
  4. enclosed inside the chicken
  5. Secure with toothpicks or tie with kitchen twine and place, seam side down, in greased baking pan
  6. Pour apple juice over chicken and cover with tin foil. Bake for 20 minutes and then remove foil. Bake, uncovered for another 25 minutes.
