Ingredients
  • 1/2 pound sliced mushrooms
  • 1/4 cup butter
  • 3 slices raw bacon, cut up
  • 2 lbs boneless beef cubes (about 2-inch cubes)
  • 2 TBSPS flour
  • 1 TBSP sugar (I tend to use less, but depends on the sweetness of the wine)
  • 1/4 tsp salt
  • 1/4 tsp thyme (dried leaves)
  • 1 bay leaf
  • 1 peppercorn (OK....ONE?? Not in my kitchen; more like a dozen...)
  • 3/4 cup beef stock or broth
  • 1 1/2 cups red wine (not TOO sweet, but to your taste)
  • 1/2 pound whole small white onions (I use 2 large Vidalia (Texas Sweet) or Spanish, depending on how sweet the wine is and how much sugar; cut the onions into LARGE chunks. Not as picturesque, though!)

Directions
  1. In a large pot, saute the sliced mushrooms in butter. Remove the mushrooms and any liquid; set aside.
  2. Fry bacon until crisp. Remove bacon and set aside. Brown the beef in the bacon drippins. Blend in the flour, then sugar, salt, thyme, bay leaf (to be removed when served), and peppercorns. Add beef stock or broth, and wine.
  3. Cover and simmer for 1 hour, stirring occasionally.
  4. Add the whole onions, reserved mushrooms & juices, and bacon. Simmer 1 hour longer. Add more wine if the liquid has evaporated, as needed. Find & remove the bay leaf.
  5. Serve over rice or hot buttered noodles, with chosen veggies on the side.
  6. NOTE: If desired, I don't see why you could not add some sliced carrots, turnips, potatoes, even Brussels Sprouts, in the last hour of cooking time, though no longer "traditional Bourguignon", and make this a stew.
