Happy Bears Raisin Squares Recipe

  • Pastry:
  • 2/3 cup milk
  • 1 tsp sugar
  • 1 envelope dry yeast
  • 1 cup butter
  • 2 1/2 cups flour
  • 3 egg yolks
  • 1 whole egg
  • Filling:
  • 3 cups raisins
  • 1 1/4 cups water
  • 1 cup brown sugar
  • 1/3 cup flour
  • 1/4 tsp salt
  • 3 Tbsp fresh lemon juice
  • 1/2 tsp vanilla
  • Sugar for sprinkling top

Directions
  1. Make crust: Pour milk into a small saucepan. Bring to just below the boiling point in order to scald. Remove from heat and cool to lukewarm. Skim off and discard the skim that forms on top as the milk cools.
  2. Stir sugar into milk. Sprinkle yeast over the top of the milk ~ BE CAREFUL not to let the yeast stick to the sides of the pan. Let stand for 10 minutes. Stir.
  3. Pour mixture into a bowl. Add butter, flour and eggs. Mix well to form a dough.
  4. Roll out half the dough and line the bottom of a greased 13x9" baking pan with it.
  5. Make filling:
  6. Combine raisins and water in a saucepan; bring to a boil. Reduce heat, cover and simmer for 5 minutes.
  7. In a small bowl, combine brown sugar, flour and salt. Stir this mixture into the simmering raisins. Return mixture slowly to boiling point, stirring frequently until the filling thickens.
  8. Remove from heat; stir in lemon juice and vanilla. Allow to cool for about half an hour.
  9. Prepare to bake: Preheat oven to 350F. Spread raisin mixture over the prepared bottom crust in the pan. Roll out the remaining half of the pastry and place over the raisin filling; prick top dough a few times with a fork to allow steam to escape while baking. Sprinkle with sugar according to taste preference.
  10. Bake at 350F for 45 to 50 minutes. Allow to cool in pan 15 to 20 minutes before cutting into squares.
