Ingredients
  • 6 large, whole lettuce leaves
  • 1 cup bean sprouts (or favourite sprouts of choice)
  • 2 mangoes, peeled, and chopped
  • 9 oz (260 g) canned, sliced water chestnuts, drained
  • 2 tsps finely chopped preserved ginger
  • 2 tsps finely chopped fresh mint leaves
  • 3 TBSPS (or more, if needed) low-fat mayonnaise
  • 1 TBSP low-fat unflavoured yogurt (or more, if needed)

Directions
  1. If lettuce leaves are extremely large, tear in half (to make 2 rolls per serving), if desired. Wash lettuce and dry extremely well; set aside.
  2. Toss together sprouts, mangoes, water chestnuts, ginger and mint.
  3. Combine mayonnaise and yogurt. Fold through mango mixture.
  4. Place a spoonful of mixture on each lettuce leaf (amount according to size of leaves). Roll up gently, but tightly, and secure with a toothpick. Place seam-side down on serving plates; serve immediately.
  5. NOTE: You can mix the filling ahead of time, put in a covered container, and refrigerate until ready to serve. Do not roll in lettuce leaves until serving time, though, or lettuce will wilt. You CAN drizzle a bit of your choice salad dressing on the serving plates if desired, but the rolls don't really need any more dressing. Your choice.
