Ingredients
  • 1 whole chicken chopped
  • 1 red onion, cutted in half and sliced
  • 1 tbsp crushed garlic
  • 3 inch ginger, sliced
  • 3 tbsp oil
  • tanglad / lemon grass, tied
  • patis (fish sauce)
  • 1 large unripe papaya, sliced
  • chilli pepper leaves

Directions
  1. in a pot, heat oil
  2. saute garlic, onion, ginger
  3. add chicken and stir until it changes color
  4. add 5 tbsp patis
  5. simmer for 5 minutes
  6. add water and tanglad and bring to boil
  7. simmer for 20 minutes
  8. remove tanglad and add papaya
  9. when papaya is cooked, add chilli pepper leaves
  10. season to taste with patis
  11. remove from heat
  12. serve hot with patis and kalamansi (or lemon will do) on the side
  13. best with white rice
