Buffalo Balls Marsala Recipe

Ingredients
- 2 lbs. ground buffalo meat
- 1 egg, beaten
- 8-10 oz fresh sugar snap peas
- 1 bunch scallions, minced
- 10-12 oz. baby carrots
- 1 onion, chopped
- 1 10-oz can beef consommé
- 1 10-oz can diced tomatoes with jalapeno
- 1 10-oz canfull of sweet Marsala wine
- 8-10 plump gloves of garlic, peeled
- 1 T. Worcester sauce
- 3 dried bay leaves
- 15 fresh sage leaves, chopped
- 4 T. fresh thyme
- 4 T. Wondra flour
- 1 T. tomato paste
- 2 T. butter
- Salt to taste
- Sugar to taste
- Black pepper to taste
Directions
- Add all ingredients except buffalo, sugar snaps and scallions to a slow cooker and stir to combine thoroughly. Cover and cook on high for 1 hour. Form buffalo into meat balls with egg, sprinkle with salt and add to stew Add sugar snaps. Cook for an additional 3 hours. Check seasonings and add salt, pepper and sugar to taste. Remove bay leaves and cover top with fresh minced scallion. Cook 5 minutes additional.
