Ingredients
- 1 pound (500 g) potato gnocchi
- 6.5 oz (200 g) Gorgonzola (or other creamy blue cheese), crumbled
- 3/4 cup (185 ml / 6 fl oz) milk
- 2 oz (60 g) butter
- 2 oz (60 g) walnuts, toasted and chopped
- 6.5 fl oz (200 ml / just over 3/4 cup) thickened cream (double cream, whipping cream, 35% mf)
- Freshly ground black pepper
Directions
- Cook gnocchi in boling water in a large saucepan, following packet directions. Drain, set aside, and keep warm.
- To make the sauce, place Gorgonzola (or blue cheese), milk, and butter in a saucepan and cook over low heat, stirring, for 4 - 5 minutes or until the cheese melts. Stir in walnuts, cream, and black pepper to taste. Bring to a simmer and cook for 5 minutes or until sauce reduces and thickens.
- Spoon sauce over hot gnocchi and toss to combine.

This would obviously be great as a main dish but I think it would also make a fantastic side dish with steak. Either way, it cries out for a nice big red to drink with it. ;-) Thanks for posting it, Kukla!
