Ingredients

1 TBSP olive oil

1/4 cup chopped onion, frozen or fresh

1 1/3 cups refrigerated, prepared mashed potatoes

1 ounce smoked salmon, finely chopped

1/4 tsp dried dill weed

1/8 tsp minced roasted garlic, jarred or fresh

Black pepper to taste

2 large salmon fillets, about 8 ounces each, skin removed

Directions

Preheat oven to 450 F.

Heat 1 tsp of the oil in small skillet or saucepan. Add the onion and saute until soft but not brown. Mix with the (cold) mashed potatoes, smoked salmon, dill, garlic, and pepper.

Slice each salmon fillet in half horizontally. Place the salmon pieces on a clean surface, darker side up, and mound a quarter of the potato mixture at one end of each piece. Roll the fillet around the potatoes and secure the end with a toothpick. Coat each roll with some of the remaining oil.

Place fish rolls on a rack set on a sheet pan and roast in the oven for 15 minutes. The salmon will have a crusty brown surface and will flake when gentle pressure is aplied.

Remove from the oven, remove the toothpick, and serve.
