How to make it

  • Place all ingredients in a food processor and mix until smooth and well combined - a little extra milk may be required if mixture is too thick. Ladle spoonfuls into a non-stick pan over medium heat or use an electric fry pan on medium heat.
  • The first pikelet may require a tiny bit of light greasing of the fry pan but after that don’t grease the pan between each batch and the pikelets will have a lovely golden brown surface. Cook both sides, approximately 2 minutes each and cool on a wire rack

    Oh my goodness, I haven't had pikelets since I left England in 1962. I can't wait to try them again. They are great too with just butter & jam but I would leave out the parsley if I was going to eat them like that. Thanks for a treat I had forgotten. 5 forks
