How to make it
Dredge steaks in flour. Heat clarified butter on med- high in skillet till hot. Saute steaks in butter, turn when brown. Cook until Medium rare about 4 minutes per side. Remove steaks to platter, tent with foil. Add mushrooms. Saute briefly. Deglaze pan with Maderia wine. Add Heavy cream, about 1 cup. Reduce. Season with salt and pepper to taste. Plate tenderloins and pour sauce over the steak.
