Ingredients
  • 50 - 60 whole cloves garlic, peeled
  • 12 ounces sharp (Aged, Old) cheddar cheese
  • 1/3 cup fresh parsley leaves, stems removed
  • 1 to 3 jalapeno peppers (optional, to taste)
  • 6 cloves fresh garlic
  • 6 ounces hot pork sausage meat (remove the skins)
  • 6 ounces milk pork sausage meat (remove the skins)
  • 1 1/4 cups buttermilk baking mix (Bisquick, or your favourite)

Directions
  1. Blanch the 50 to 60 cloves garlic in boiling wter for 3 to 4 minutes. Drain and set aside to cool.
  2. In a food processor, shred the cheese. Remove and set aside. Allow cheese and sausage to come to room temperature.
  3. In a dry food processor bowl, chop parsley and jalapeno peppers, if using. Crush the 6 garlic cloves and add to the processor, along with the pork sausage meats, and buttermilk mix. Process until well incorporated. Add cheese, and process only until well combined.
  4. Shape into 50 to 60 small balls, inserting one whole blanched garlic clove into each ball.
  5. At this point, the meatballs may be frozen for baking at a later time, if desired. (Place on cookies sheets and allow to freeze, then pop them into a zip-lock bag.)
  6. To bake immediately: Place meatballs on an ungreased baking sheet. Bake at 325 F for 20 - 25 minutes, or until golden brown.
  7. Serve hot as an appetizer, perhaps with a bowl of plain yogurt (or a Raita, Tzatziki sauce, or creamy cucumber dip) on the side.
