Ingredients
  • CRANBERRY LAYER:
  • 2 envelopes unflavored gelatin
  • 1/4 cup cold water
  • 1 (1-pound) can whole cranberry sauce
  • 2 TBSPS lemon juice
  • 1/4 tsp allspice
  • 1/8 tsp mace or nutmeg
  • 1 cup ginger ale
  • 1 cup orange sections (canned mandarin, or fresh & peeled, sectioned)
  • CHEESE-NUT LAYER:
  • 1 envelope unflavored gelatin
  • 2 TBSPS cold water
  • 1 cup orange juice
  • 1 (3-ounce) package cream cheese
  • 1/2 tsp ginger
  • 1/2 cup pecan pieces
  • 1/2 cup heavy cream (whipping cream, 35% milk fat)
  • 1/2 cup dairy sour cream

Directions
  1. TO MAKE CRANBERRY LAYER: Soften gelatin in cold water; melt over hot water. Combine remaining ingredients, then stir in melted gelatin. Pour into a 2-quart mold. Chill until firm.
  2. TO MAKE THE CHEESE-NUT LAYER: Soften gelatin in cold water; melt over hot water. Gradually mix orange juice into the cream cheese. Add ginger and nuts; mix well. Stir in gelatin. Combine heavy cream and sour cream and whip until stiff. Fold into gelatin mixture.
  3. Pour over top of the [set firm] cranberry layer. Chill until firm.
  4. Remove from the mold and garnish with crisp greens and orange sections, if desired.
