A wonderful treat was when my mum would make the scones on Sunday mornings and my Dad would prepare a spread to put on them, such as potted meat or smoked fish / roll mops with tomatoes battered rabbit and then we all would arrive with our children ... More

Ingredients
  • 3 Cups SR Flour Pinch of salt
  • 1 tablespoon of butter or margarine
  • 2 eggs ½ Cup milk
  • optional if you want to make sweet scones just add a handful of dried fruit like raisins or sultanas

Directions
  1. Always mix with a bread and butter knife
  2. Rub butter into the flour until it becomes like breadcrumbs then beat the 2 eggs in a jug with a little milk make a well in the centre of the flour pour in the egg milk mixture fold through using your knife gently when mixed the dough should gently pull away from the sides of the bowl roll out onto a floured board the pat flat about ¾ inch thick then use a small vegemite glass or scone cutter, line baking tray with baking paper or alfoil, put scones onto the tray bake 10 -15 mins until nicely browned. Don’t open oven more than necessary as scones need a hot oven
