Chicken Breasts In Mango And Yogurt Recipe
I love this dish and it is very easy to make - you don't even have to brown the chicken. This is my standby. It is from a cook book, but I can't remember which one.

Ingredients
  • 4 boneless skinless chicken breasts (I use free range)
  • 1/3 cup mango chutney
  • 1/3 cup plain yogurt (low fat or not - you choose)
  • 1 tablespoon dijon mustard
  • 1 tablespoon minced fresh ginger
  • 2 teaspoons flour

Directions
  1. Mix all ingredients except chicken
  2. Place chicken in a shallow baking pan (the chicken pieces should be close together, but not overlap)
  3. Cover with the yogurt mixture
  4. Cook at 350 for about 45 minutes or until the chicken is cooked through
  5. I like it with rice and a green vegetable or salad

This looks awesome. I'm on my way to the store to pickup more chutney anyway so I'll get extra. Bill will like this also. I have a nice recipe for a really easy rice and french green lentils. I'll post it on my page. :-)


We made this today and it is REALLY good! We had to use regular yellow mustard and we ended up letting it marinade overnight cuz we were too lazy to cook it last night and had leftovers.... It was so moist and tender and the sauce has just a bit of heat... yumm! :D
