Unbaked fruity bites

- 250 g butter or margarine (1 cup) shopping list
- 250 ml sugar (1 cup) shopping list
- 500 ml raisins (2 cups) shopping list
- 250 ml sultanas (1 cup) shopping list
- 250 ml glaced cherries, halved(1 cup) shopping list
- 250 ml pecannuts (1 cup) shopping list
- 2 extra large eggs shopping list
- pinch of salt shopping list
- 30 ml brandy (2 tablespoons + 1 teaspoon) shopping list
- 5 ml vanilla essence (1 teaspoon) shopping list
- 2 packets of buscuits, finely broken into pieces shopping list
- Topping: shopping list
- 500 ml icing sugar (2 cups) shopping list
- 10 ml cinnamon (2 teaspoons) shopping list
- 30 ml water (2 tablespoons + 1 teaspoon) shopping list
- lemon juice shopping list
How to make it
- Greace a large baking tray.
- Heat up the butter and sugar until sugar are dissolved.
- Stirr in all the fruit until boiling point.
- Let simmer for 5 minutes.
- Let it cool down.
- Beat eggs, salt and brandy together.
- When the fruitmix is cooled down, mix in the egg mixture.
- Stir thoroughly.
- Stir in the biscuits.
- Mix very well until everything is covered.
- Let it stand for a while.
- Place into baking tin, making flat on top.
- Put into freezer.
- Topping:
- Mix icing sugar, cinnamon and water.
- Stir in a bit of lemon juice until a thin, but plyable icing.
- Put on top of fruity blocks.
- Put back in freezer.
- Cut up in blocks just before serving.
