Unbaked Fruity Bites Recipe

Ingredients
  • 250 g butter or margarine (1 cup)
  • 250 ml sugar (1 cup)
  • 500 ml raisins (2 cups)
  • 250 ml sultanas (1 cup)
  • 250 ml glaced cherries, halved(1 cup)
  • 250 ml pecannuts (1 cup)
  • 2 extra large eggs
  • pinch of salt
  • 30 ml brandy (2 tablespoons + 1 teaspoon)
  • 5 ml vanilla essence (1 teaspoon)
  • 2 packets of buscuits, finely broken into pieces
  • Topping:
  • 500 ml icing sugar (2 cups)
  • 10 ml cinnamon (2 teaspoons)
  • 30 ml water (2 tablespoons + 1 teaspoon)
  • lemon juice

Directions
  1. Greace a large baking tray.
  2. Heat up the butter and sugar until sugar are dissolved.
  3. Stirr in all the fruit until boiling point.
  4. Let simmer for 5 minutes.
  5. Let it cool down.
  6. Beat eggs, salt and brandy together.
  7. When the fruitmix is cooled down, mix in the egg mixture.
  8. Stir thoroughly.
  9. Stir in the biscuits.
  10. Mix very well until everything is covered.
  11. Let it stand for a while.
  12. Place into baking tin, making flat on top.
  13. Put into freezer.
  14. Topping:
  15. Mix icing sugar, cinnamon and water.
  16. Stir in a bit of lemon juice until a thin, but plyable icing.
  17. Put on top of fruity blocks.
  18. Put back in freezer.
  19. Cut up in blocks just before serving.
