Spaghetti pancakes have been around for quite some time. It's a great way to use up leftover spaghetti. You can make 1 large pancake and cut it in wedges or several smaller ones.

Ingredients
  • 3 cups cooked spaghetti (our preferences are whole wheat, flax or multigrain spaghetti)
  • 4 large eggs, gently beaten
  • 1/2 zucchini, finely chopped / small dice or shredded
  • 1 onion, finely chopped
  • 1-2 garlic cloves, minced
  • 2 tsps. fresh parsley, chopped
  • salt and pepper to taste
  • 1 tsp. butter and 1 tsp. olive oil

Directions
  1. Saute zucchini and onion in a very small amount of oil until soft and light in colour.
  2. In a large bowl, beat eggs.
  3. Add spaghetti and mix until they are well coated.
  4. Blend cooled zucchini, onion garlic, parsley, salt and pepper into the spaghetti mixture.
  5. Heat butter and oil in a large frying pan or skillet on medium heat.
  6. Pour the spaghetti mixture into the frying pan and allow to fry.
  7. The object is to get the bottom of the spaghetti pancake lightly browned.
  8. It is very easy to flip as I just slide it onto a large plate then flip it back into the frying pan to allow the other side to crisp up.
  9. NOTE: You do not want it to brown too much or it will become tough.
  10. When done, flip it onto a cutting board and cut into large serving sized wedges.
  11. Serve with a nice leafy green salad or soup.

This sounds like the base for spaghetti pie. I was sceptical but when I tried it, it worked really well. The addition of zuchini is brilliant.
