Ingredients
  • 1 large bunch of radishes (at least 20) with their leaves on (If you can't find radishes with good fresh leaves, then substitute a bunch of arugula)
  • 2 TBSPS (25 ml) butter
  • 1/2 cup (125 ml) orange juice (fresh-squeezed is always best)
  • Salt and freshly ground black or white pepper, to taste

Directions
  1. Remove the leaves from the radishes (or, alternately, use arugula) and wash them well. Toss the leaves into a hot frying pan and stir-fry quickly, until leaves are limp and dark green. Tip them into a sieve and rinse them under cold water, squeeze them dry, and then chop them finley. Reserve.
  2. Wash and trim the radishes, then cut them into quarters. Bring a saucepan of water tot he boil, add salt and drop in the radishes. Blanch them for about 1 1/2 minutes, then drain and refresh them under cold running water.
  3. In a large frying pan, melt the butter. Add the blanched radishes, the leaves (or arugula), and the orange juice (and, Grand Marnier if using). Bring just to a boil, stirring to coat everything. Lower the heat and cook until just hot through.
  4. Season with additional salt and pepper, and serve immediately.
  5. NOTE: I use a LOT of pepper on mine, personal preferrance only. BUT -- I have also made this using the arugula instead of the radish greens, at which time I have cut the pepper way back (arugula IS peppery, and you want that flavour to come through too).

Does cooking it calm the taste? I like raddishes, however, they tend to be on the "hot" side. I guess I should try this and find out.


Hi, MsManser, and thanks for dropping by...Yes, cooking DOES clam the flavour quite a bit, and you can use less pepper if you choose (though, that's a totally different kind of heat...)
Radishes are so good for you that everyone should eat them more often :)
