Mimies Special Cheese Date Cookies Recipe
My grandmothers special recipe. Great for Christmas snacks of for gifts.

Ingredients
  • ½ lb extra sharp cheddar cheese, grated
  • 2 sticks butter, softened (lightly salted is OK)
  • 3 cups self-rising flour
  • ¼ tsp ground cayenne pepper
  • 1 large box pitted dates
  • 1½ cups pecan halves

Directions
  1. Preheat oven to 350o.
  2. Mix well grated cheese and softened butter. Add flour and cayenne pepper. Blend thoroughly to make soft dough.
  3. Pinch off a small amount of dough about the size of a walnut. Place a date and a pecan half together and wrap with the pinch of dough to completely cover the date and nut. Repeat until ingredients are used.
  4. Place cookies on un-greased cookie sheet and bake in 350o for 20 minutes (more or less depending on oven and thickness of dough.)

There are so many things I like about this recipe, without even having tried it - the first being that there is no added sugar!

One question though - what form is the 1/4 tsp red pepper in? Flakes, powder, bell?
