1lb. boneless,skinless chicken breasts,cut in strips
2Tbs veg oil,divided
2c fresh broccoli florets
1c julienned carrots
1/4c salted peanuts,finely chopped
How to make it
Cook pasta according to directions. Meanwhile,in a small measuring cup or bowl,combine the cornstarch,soy sauce,vinegar,hoisin sauce,ginger and garlic until blended;set aside
In a lg. skillet or wok,stir fry chicken in 1Tbs. oil for 5-8mins. or till no longer pink. Remove with slotted spoon. Drain pasta and set aside.
Stir-fry broccoli and carrots in remaining oil for 5-6 mins or till crisp tender. Stir cornstarch mixture and pour into pan. Bring to a boil;cook and stir for 2 mins or until thickened. Stir in chicken and pasta;heat through. Sprinkle with peanuts.
