How to make it

  • Toast whole wheat bread crumbs, crumble, set aside
  • Place onions in boiling water for about 30 seconds, or as directed
  • on package (this loosens the skin and makes peeling easier)
  • Remove from boiling water with a slotted spoon
  • When cool enough to handle, cut off both ends, peel
  • In a skillet, on medium high heat, melt butter and olive oil
  • When hot, add onions
  • Let them *sizzle* until slightly browned on one side, then flip them over and let them continue to sizzle
  • May have to turn heat down a little
  • Add a lid, just keep them hot enough and *sizzling*, rolling them over and over, frequently, so they will not get too brown
  • When they can be pierced with a fork, remove the lid
  • Add the walnuts, thyme, white and black pepper
  • (may have to add a little more butter or olive oil)
  • Continue to sizzle until walnuts are coated pretty well
  • Place onions, walnuts in casserole dish*, or serving dish
  • Add toasted bread crumbs to skillet for a few seconds, just to warm
  • Then sprinkle crumbs evenly over onions
  • Then sprinkle evenly with Parmesan cheese
  • Then sprinkle with cayenne pepper
  • *If using a casserole dish, may run under the broiler, watching closely, just to slightly brown
  • This is a great dish, and you can adjust it by adding crumbled bacon, pecans, nutmeg, different spices, etc.
