Roasted Butternut Squash With Pine Nuts And Honey Recipe
From Christine Cushing's "Fearless in the Kitchen" cookbook comes this wonderful side dish that takes a total of 30 minutes to make! The squash turns a beautiful golden brown colour with the addition of soy sauce and honey.

Ingredients
  • 1/2 butternut squash, peeled and cut into 1 inch cubes
  • 2 TBSPS (25 ml) honey
  • 1 TBSP (15 ml) good-quality soy sauce
  • 1 TBSP (15 ml) vegetable oil
  • Dash of sesame seed oil
  • Pinch of ground allspice
  • Cracked black pepper, to taste
  • 1/3 cup (75 ml) pine nuts

Directions
  1. Preheat the oven to 375 F (190 C).
  2. In a large bowl combine the squash cubes, honey, soy sauce, vegetable oil, sesame oil, and allspice and pepper. Toss to coat evenly.
  3. Spread squash in a single layer on a baking sheet or small, shallow roasting pan. Roast, stirring several times to prevent scroching, for 15 to 20 minutes or until the squash is just tender.
  4. Add the pine nuts and roast for a further 3 minutes, or until pine nuts are just golden (be careful they don't burn, though!).
  5. Adjust seasoning and serve immediately.
