Ingredients
  • Nonstick cooking spray
  • 1-1/2 cups All-purpose flour
  • 2/3 cup sugar or sugar substitute equivalent to 2/3 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 egg, beaten or 1/4 cup refrigerated egg product
  • 1/4 cup sour cream - If watching calories, fat free is fine
  • 1/4 cup whole milk or 1% or Skim milk
  • 2 teaspoons vegetable oil *I have used Olive Oil and it works well.
  • 1 teaspoon vanilla
  • 2/3 cup mashed banana or 2 medium bananas
  • 8-10 maraschino cherries, well drained and chopped
  • 1/4 cup chopped walnuts
  • 2-1/2 Tablespoons mini semisweet chocolate pieces

Directions
  1. Preheat oven to 350 degree F.
  2. Lightly coat the bottom a 9 x 5 x 3 inch loaf pan with nonstick cooking spray and place to one side.
  3. In a large bowl, blend all-purpose flour, sugar, baking powder, and baking soda.
  4. Make a well in the center of flour mixture and set aside.
  5. In a medium bowl, combine sour cream, milk, egg, oil and mix.
  6. Stir in mashed banana and vanilla.
  7. Add sour cream mixture all at once to flour mixture.
  8. Stir just until moistened.
  9. Batter should be lumpy.
  10. Fold in chopped cherries, walnuts, and chocolate chips.
  11. Spoon batter into prepared pan.
  12. Bake for 35 to 40 minutes or until a toothpick inserted in the center comes out clean.
  13. Cool in pan on a wire rack for 10 minutes.
  14. Remove bread from pan.
  15. Cool completely on wire rack.
  16. Makes approximately 12-14 slices.
