Great chicken casserole. I love the addition of bulgar.

Ingredients
  • 2-1/2 cups cooked chicken, roughly chopped
  • *If I'm in a hurry, I use a rotisserie chicken.
  • 2 cups reconstituted bulgur wheat *
  • 2 celery ribs, trimmed of strings and chopped
  • 1, 4 ounce can sliced mushrooms, drained (I prefer fresh mushrooms that have been gently sauteed)
  • 1, 8 ounce can sliced water chestnuts, drained and chopped
  • 1 cup green beans or peas thawed
  • 1/4 cup sliced almonds, lightly toasted
  • 3/4 cup low-fat mayonnaise
  • 1, 10-1/2 ounce can cream of chicken soup
  • 1 onion, finely chopped
  • 1 Tbsp. lemon juice
  • 1/4 teaspoon salt
  • 1/2 tsp. freshly ground pepper
  • TOPPING:
  • 1 cup Ceasar or garlic flavored croutons, crushed
  • paprika

Directions
  1. Preheat oven to 350°F.
  2. *To reconstitute bulgur wheat, add 1 cup dry bulgur to 1-3/4 cups boiling water. This recipe calls for 2 cups dry bulgur.
  3. Let stand covered for at least 30 minutes.
  4. Press out any excess water.
  5. Combine all ingredients.
  6. Place in 8 x 11 inch baking dish sprayed with vegetable spray.
  7. Top with crushed Ceasar flavored croutons, sprinkle with paprika and bake for 50 - 60 minutes.
  8. *I have sometimes substituted Quinoa or Coucous for the bulgar and that also works well.

I've made it over the week end use couscous instead of bulgar. It worked well.


Hey, I like the choices. bulgar, couscous or quinoa. I'm just beginning to realize the goodness of quinoa and I think it would be delicious in this recipe. Thanks.
