Creamy Chicken And Bulgar Casserole Recipe

Ingredients

2-1/2 cups cooked chicken, roughly chopped

*If I'm in a hurry, I use a rotisserie chicken.

2 cups reconstituted bulgur wheat *

2 celery ribs, trimmed of strings and chopped

1, 4 ounce can sliced mushrooms, drained (I prefer fresh mushrooms that have been gently sauteed)

1, 8 ounce can sliced water chestnuts, drained and chopped

1 cup green beans or peas thawed

1/4 cup sliced almonds, lightly toasted

3/4 cup low-fat mayonnaise

1, 10-1/2 ounce can cream of chicken soup

1 onion, finely chopped

1 Tbsp. lemon juice

1/4 teaspoon salt

1/2 tsp. freshly ground pepper

TOPPING:

1 cup Ceasar or garlic flavored croutons, crushed

paprika

Directions

Preheat oven to 350°F.

*To reconstitute bulgur wheat, add 1 cup dry bulgur to 1-3/4 cups boiling water. This recipe calls for 2 cups dry bulgur.

Let stand covered for at least 30 minutes.

Press out any excess water.

Combine all ingredients.

Place in 8 x 11 inch baking dish sprayed with vegetable spray.

Top with crushed Ceasar flavored croutons, sprinkle with paprika and bake for 50 - 60 minutes.

*I have sometimes substituted Quinoa or Coucous for the bulgar and that also works well.

I've made it over the week end use couscous instead of bulgar. It worked well.
