Pineapple Fried Rice
Ingredients
- 8 rings canned pineapple
- 1/2 carrot/1 red pepper
- 1/2 onion
- 1 green onion
- 1-2 tbs jalapeƱo pepper
- 1 tsp minced garlic
- 1 tsp minced ginger
- 2 cups cold rice(I like scented) (1-2 day old rice is the best
- 2 tbs soy sauce
- 1 tsp curry powder
- 1 tsp sugar(optional)
How to make it
- Grate carrot
- wash and chop pepper
- peel and chop onion
- finely chop green onion
- Heat oil
- When it is hot:
- add garlic and ginger cook 30 seconds
- add onion cook for 1 minute
- add pepper/ carrot and pineapple
- add rice stir about 2 minutes or until rice is shiny
- add soy, curry and sugar
- stir and serve
