- 1 can sliced beets (Reserve juice)
- 1/2 med onion (sliced)
- 1 T. cornstarch
- 2 T. sugar
- 1/2 tsp. salt
- 2/3 C. reserved juice and water
- 1/4 C. vinegar
- Dash of pepper
How to make it
- In saucepan, stir together cornstarch, sugar, salt and pepper.
- Stir in vinegar and combined beet juice and water. Cook, stirring constantly, until mixture thickens and boils.
- Boil and stir 1 min.
- Add beets and onion and heat through.
