Ingredients

One method:

6 cups of self-rising flour

3/4 cup shortening

16 ounces buttermilk

Alternate Ingredients for similar biscuits:

2 cups All-purpose flour, stirred to loosen before measuring

2 tsps. baking powder

1/4 tsp. baking soda

1 tsp. salt

1/4 cup vegetable shortening, chilled

2 Tbsps. butter, cold

3/4 cup buttermilk

Directions

Preheat oven to 500° F.

Add flour to large mixing bowl and make a well in the middle.

Add buttermilk and shortening.

Work shortening with your fingers, breaking it up into tiny pieces.

Blend the flour into the liquid, pulling it inwards, a little at a time. Work in enough flour to make a soft dough.

You don't want it too sticky or too.

There may still be some flour around the sides of your bowl but you should NOT use all the flour.

Dust your hands with flour.

Pinch off pieces of dough about the size of a small orange, about 1/3 cup.

Work the dough in one hand, using your fingers to move it in a circular motion.

Remember, you only want to shape them.

Place biscuits side-by-side with no gaps between them on a greased baking sheet.

When you have every biscuit placed on the sheet, press 2 or 3 of your knuckles lightly in the tops of each one. Or not.

Bake for approximately 20 minutes, or until light brown on top.

When they are done, remove from pan immediately.

Place in a basket, and cover with a clean kitchen tea towel.

Serve with butter and we like to have honey and preserves on hand.
