Ingredients
  • 1 cup bulgar
  • 6 scallions, all finely chopped
  • 1 1/2 cup fresh chopped parsley
  • 1/4 cup olive oil
  • 1 medium red onion, finely chopped
  • 1/2 cup finely chopped mint
  • 1/4 lemon juice
  • 2 medium tomatoes, seeded and chopped
  • Salt and pepper to taste

Directions
  1. Place bulgar in bowl, cover with cold water and let stand for 2 hours
  2. Strain bulgar, releasing all liquid
  3. Mix in onions and scallions with bulgar, stir in parsley, mint, olive oil and lemon juice
  4. Season with salt and pepper, toss in tomatoes
  5. Refrigerate at least 2 hours before serving
