How to make it

  • Place bulgar in bowl, cover with cold water and let stand for 2 hours
  • Strain bulgar, releasing all liquid
  • Mix in onions and scallions with bulgar, stir in parsley, mint, olive oil and lemon juice
  • Season with salt and pepper, toss in tomatoes
  • Refrigerate at least 2 hours before serving
