- 1 cup bulgar shopping list
- 6 scallions, all finely chopped shopping list
- 1 1/2 cup fresh chopped parsley shopping list
- 1/4 cup olive oil shopping list
- 1 medium red onion, finely chopped shopping list
- 1/2 cup finely chopped mint shopping list
- 1/4 lemon juice shopping list
- 2 medium tomatoes, seeded and chopped shopping list
- salt and pepper to taste shopping list
How to make it
- Place bulgar in bowl, cover with cold water and let stand for 2 hours
- Strain bulgar, releasing all liquid
- Mix in onions and scallions with bulgar, stir in parsley, mint, olive oil and lemon juice
- Season with salt and pepper, toss in tomatoes
- Refrigerate at least 2 hours before serving
