Mushroom Barley Soup Recipe
I've made this soup with and without the barley. It's so good!

Ingredients
  • 1 medium onion, diced
  • 1 Tbsp unsalted butter
  • 1/2 pound fresh mushrooms, sliced (1 grocery store-sliced package)
  • 4 cups vegetable stock (I've made it with chicken stock, too)
  • 1/2 cup pearled barley
  • 1/4 cup plus 2 Tbsp skim milk
  • 1 Tbsp all-purpose flour

Directions
  1. In a heavy saucepan, melt butter over medium-high heat
  2. Saute onions and mushrooms 3-4 minutes, or until softened
  3. Add stock, barley, salt and pepper to taste. Bring to a boil.
  4. Reduce heat to low and simmer 30 minutes.
  5. Combine milk and flour in a jar with a lid, shake until blended.
  6. Stir milk mixture into soup and simmer 15 minutes until slightly thickened.
