There are so many recipes for "Cornbread" but this is the one I know.

Ingredients
  • 1-1/2 cups stone ground cornmeal (white or yellow)
  • 1 Tbsp. baking powder
  • 1/2 cup all-purpose flour
  • 1 tsp. salt
  • 4 Tbsp. melted bacon fat, divided or olive oil
  • 1 cup (or more) buttermilk
  • *Sometimes I like to add a handful of fresh chopped parsley and some folks like to add fresh rosemary.

Directions
  1. Preheat oven to 450 degrees.
  2. In large bowl, mix cornmeal, baking powder, flour, salt, 2 tablespoons of the oil or fat, and 1 cup of buttermilk.
  3. If cornbread batter is too thick (should be pour-able consistency of pancake batter), add more buttermilk.
  4. Have a large cast-iron skillet with the remaining 2 tablespoons oil or fat heating on a burner.
  5. Heat until skillet and oil are very hot, but do not allow the fat to get hot enough to smoke.
  6. Leaving heat on under skillet, pour batter into sizzling hot skillet.
  7. This insures a nice, crispy crust and a tender middle.
  8. Allow batter to cook for about 30 seconds to 1 minute or until bubbles around edges of batter begin to look a bit dry.
  9. Instantly remove skillet from burner and turn immediately into preheated oven to bake until top is a deep golden brown (about 20 to 25 minutes).
  10. Remove skillet from oven, loosen edges and bottom of cornbread.
  11. *If the skillet has been properly seasoned, this should be easy.
  12. Turn bread onto serving plate so that the crisp bottom side is on the top.
  13. Now it's ready to cut and serve immediately.

I think the bacon fat will really make this recipe come to life!


The bacon fat here rocks! Make all the difference between a good fried cornbread and a great fried cornbread. Great post! =)


This is a perfect recipe! Same as mine. Sometimes, I even throw an egg in, and line the black skillet with uncooked bacon slices before I pour in the cornbread mixture. :)
