Ingredients

1 cup whole wheat flour

1 cup natural bran

1/2 cup brown sugar

1 tsp. baking soda

1/2 tsp. salt

1/2 tsp. cinnamon

1 cup shredded carrots

1/2 cup raisins

1 cup buttermilk

1/4 cup oil

1 egg

1 tsp. vanilla

Directions

In a large mixing bowl add and stir together all dry ingredients.

Add carrot, raisins, buttermilk, oil, egg and vanilla and stir together until thoroughly mixed

Spoon into muffin tins. I use a tin with six openings, twelve could be used for smaller muffins. If using the larger pan reduce baking time by 5 minutes.

Bake at 375 degrees for 25 minutes or until set in the middle.
