How to make it

  • In a large mixing bowl add and stir together all dry ingredients.
  • Add carrot, raisins, buttermilk, oil, egg and vanilla and stir together until thoroughly mixed
  • Spoon into muffin tins. I use a tin with six openings, twelve could be used for smaller muffins. If using the larger pan reduce baking time by 5 minutes.
  • Bake at 375 degrees for 25 minutes or until set in the middle.
