These obtained their name because the first ones apparently were fried on the blade of a farmers hoe.

Ingredients
- 1 cup self-rising flour
- *I have used buckwheat flour for these as well. If you decide to use buckwheat flour, you must add 1 teaspoon baking powder and a pinch to 1/2 teaspoon salt.
- 1 cup self-rising cornmeal
- 2 eggs
- 1 Tablespoon sugar
- 3/4 cup buttermilk, homogenized or you can use half yogurt and half milk beaten together
- 1/3 cup plus 1 Tablespoon water
- 1/4 cup bacon grease or vegetable oil
- Oil or butter for frying
- *I like to let the batter set awhile before actually frying the hoecakes.
Directions
- Mix all the ingredients together in a bowl until well combined.
- Don't mix in the oil for frying though.
- Heat frying oil or butter in a large skillet over medium heat.
- Drop the batter into the hot skillet.
- *I use a large cast iron skillet.
- Use about 2 Tablespoons of batter for each.
- Fry them until brown and crispy.
- Turn and brown on the other side.
- Remove with a slotted spatula or spoon and drain on paper towels.
- Mmmmmm... serve with whatever y'all want to.
