Rice Pudding Baked Recipe
Rice pudding can usually be made without too much thinking. It's not difficult when the main ingredient is leftover rice.

Ingredients
  • In a deep pot on real low heat add:
  • 3 cups cooked white rice
  • 4 cups whole milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • Stir frequently for about 45 minutes until thick.

Directions
  1. Preheat your oven to 350 degrees
  2. In separate bowl whisk together
  3. 4 egg yolks
  4. 1 teaspoon vanilla
  5. 1 teaspoon cinnamon or nutmeg
  6. Take rice mixture off the heat and stir in eggs and flavorings along with 1/2 cup raisins.
  7. Pour into a buttered 9 x 9 inch baking dish and place in oven for about 35 minutes or until firm.
  8. Cool and serve sprinkled lightly with either more cinnamon or freshly grated nutmeg.
