Ingredients
  • 1 pkg. smoked sausage, any variety, sliced
  • 2 tbsp. oil
  • 1/4 cup chopped onion
  • 1/2 cup diced bell pepper
  • 1/3 cup chopped celery
  • 1/4 cup sliced green olives
  • 1 pkg. spanish rice mix
  • 1 (10 oz.) can diced tomatoes and pepers
  • 3/4 cup water
  • 1/4 tsp. pepper

Directions
  1. Saute onion, bell pepper and celery in oil
  2. Combine all ingredients in a large saucepan
  3. Bring to a boil while stirring well
  4. Cover and simmer until liquid is absorbed, about 10-12 minutes
  5. Remove from stove and let rest for 5 minutes before serving
  6. ***For a spicier creole taste, use Hot sausage, 1/8 tsp. cayenne pepper or Louisiana Hot Sauce
  7. ***Stove Top: add sausage to 2-3 inches of boiling water. Simmer for 10-12 minutes
  8. ***Microwave: place sausage in microwave safe dish with 1/2 inch water. Microwave on high for 4-6 minutes. Allow sausage to sit 1 minute prior to serving
  9. ***Grill: grill over medium-high heat for 12-14 minutes, turning frequently
