I love grits. It's southern comfort food.

Ingredients
  • 2 cups Grits,cooked
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1 tsp. flour
  • 2 eggs, beaten
  • 1/3 tsp. pepper
  • 1 tsp. sugar
  • 1/2 cup butter / margarine
  • 1/4 cup milk
  • 3 eggs, beaten
  • oil

Directions
  1. Cook grits according to pkg. directions with 1/2 tsp. baking powder added to the water.
  2. Stir in 2 beaten eggs.
  3. Add margarine, flour, & sugar.
  4. Mix well.
  5. Cook 15 minutes more.
  6. Pour the grits mixture into a shallow baking dish to a thickness of about 3/4 inch.
  7. Cover with plastic wrap.
  8. Refrigerator overnight.
  9. Cut grits into squares of desired size and sprinkle with salt and pepper.
  10. Beat 3 eggs well and add 1/4 cup milk.
  11. Dip squares in egg mixture and fry in hot oil in a large iron skillet until golden brown.
  12. Turn only one time.
  13. Drain on paper towels and serve immediately.

As a true "Son Of The South" I know that grits is groceries.....and one of my favorite foods. I haven't made fried grits in ages. I can't seem to make them last overnight. Everyone here eats them up as soon as I take the pot off the burner. Thanks for a great posting!
